Trying to figure out how to get in enough calories while following a special diet. I recently gave up any form of wheat and stay under 15 grams of sugar per day while also giving up all artificial sweeteners. My meals consist of eggs, cheese, chicken, some beef, vegetables, salads, and almonds or pumpkin seeds for in between snacks. I do eat rice bread or wheat and gluten free breads. Since giving up wheat and artificial sweeteners I find that I am not hungry so getting in 1400 calories per day is almost impossible! I have lost ten lbs and 5 inches in my waist but now the scale won't budge. I weigh in at 240 and I am 5'3, I swim laps almost daily and have now added 20 min treadmill workouts 3-4 times a week but my plateau continues. Have any suggestions?
